RED BEANS

Ingredients:


2 pounds red kidney beans


3 chicken bouillon cubes


Onion, finely chopped


Bacon, cooked and cut into 1-inch pieces


Grated carrot


1 large tomato, diced


Peeled and diced plantains


Salt to taste


Preparation:


Rinse the beans and place them in a large bowl. Add enough water to cover the beans.


Soak the beans in water for at least a day to soften them. Do not discard the water; you will need it to cook the beans.


Add the soaked beans and water along with all the remaining ingredients, except the cilantro, to a pressure cooker.


Cook for approximately 1 hour. Remove from heat, garnish with cilantro leaves, and serve.
