GARLIC AND PARSLEY SAUCE
Ingredients:
3 or 4 cloves of garlic
300g mayonnaise
Fresh cilantro to taste (or parsley)
Olive oil (optional)
A few drops of lemon juice
Ground black pepper (optional)
Salt (optional)
Preparation:
We start with the mayonnaise.
Place 200ml of sunflower oil, an egg, and a squeeze of lemon juice in a blender.
Place the blender on the bottom and, without moving it, blend until emulsified. Once emulsified, set aside.
Add the garlic and chopped cilantro to the mayonnaise and continue blending. The amount of garlic will depend on how spicy you want the sauce. The sauce should be thick, so you may need to use a spoon to scrape it out when you remove it from the blender.
To store in the refrigerator, make sure to use a sealed container so that its aroma does not permeate the refrigerator and also so that the sauce does not get freezer burn.
