VEGETABLE SOFRITO
Ingredients:
1 tablespoon onion paste
1 clove garlic
Half a small red pepper
Half a small green pepper
1 large ripe tomato, peeled
1 small carrot (optional)
1 leek (optional)
Half a zucchini (optional)
Olive oil
Salt and pepper to taste
Preparation:
To begin preparing your vegetable sofrito, wash all the ingredients thoroughly and chop them into small cubes. You can choose to crush the garlic or add it to the mixture chopped into tiny pieces.
Take a nonstick skillet, add a couple of tablespoons of olive oil, and heat over medium heat. Once hot, start by adding the ingredients that take the longest to cook, i.e., the garlic and onion. Leave on the heat until the onion begins to turn transparent.
Then add the red and green peppers, salt, pepper, and cook for 3 minutes. If you also want to add carrots and leeks, now is the time to add them to your vegetable saute. Stir constantly to prevent sticking.
Then add the ripe, peeled tomatoes. You can buy a jar of peeled tomatoes or peel them at home following the recommendations in this article. If you want to add zucchini, you can add it along with the tomatoes.
